Chicken Tacos: Weekly Wal-Lah

     I love that football season as started. Why? Becuase it means that soon the outside temperature will start dwindling and I can start making things like Chilli and Chicken and Dumplings, but until then: It was another busy week that required a super easy crockpot throw-down. I tackled this in about 10 minutes one morning when I got home from work, slept all day, and woke up to an amazing meal to eat before my crunch time for work again!

Juicy Chicken Tacos:
     Chop 1 bunch of cilantro, place in coverable container, bathe in lime juice (I'm lazy and use the juice from the store like comes in a container that looks like a lime.), stir it up, cover, and place in the refrigerator for later.
     In your crock pot place a 3 pack of defrosted chicken breast, 1 package of taco or fajita seasoning, 1 jar of salsa (I used On the Border Original), 1 can of rinsed black beans, and 2 sliced bell peppers. Take that empty jar of salsa  and fill it up about 1/2 way with water and pour into mixture as well (This will make it like a soupy sauce when it's all done. If you want it to be thick, don't add the water.) Turn your crock pot on low and do whatever you need to do all day, about 6-7hours!

     When it's all done, scoop out the chicken and shred with 2 forks. Brace yourself against the counter, becuase you will literally be blown away at how easily the chicken just falls apart. It was falling apart for me as I was trying to get it out of the crock pot! After shredded, put the chicken back in the pot, and mix it all together. Brown your favorite tortilla in a skillet, dress the tortilla with cheese, lime-cilantro, and chicken mixture and WAL-LAH! It's a crowd pleaser.
